Gluten-Free Pancakes

Everyone loves pancakes, and why wouldn't you? They are



For a healthier, and more nourishing version try this super easy version.


1x Banana.

1x Egg.


Coconut flesh, or flakes.

Favourite berries to top.

Fresh mint leaves to top.

Coconut oil or Butter.

Serves 1 person. Add 1 more banana and 1 more egg per person you wish to serve.

Mix 1 Banana and 1 Egg together until a smooth consistency is reached (you may need to mash the banana up a little bit before adding the egg).

Heat a fry pan with a small amount of coconut oil (or butter if you don't like the taste of coconut oil). Spoon small amounts of mix to pan, spread out into shape of pancake.

Cook on medium heat until brown.

Add your favourite berries and fresh mint from the garden and you are done!.
